Recipe: Cheesy Aubergine Rolls with Spinach

Start your Holi party with this exotic and healthy Starter!

Cooking Time: 30 minutes
Serves: 4

Ingredients

  • 2 Aubergine lengthwise into 1/4-inch-thick slices
  • 1 cup blanched spinach
  • ½ crumbled paneer
  • ½ mozzarella cheese
  • 1 cup vegetables juliennes (cabbage, zucchini, carrot or any vegetable/s of your choices)
  • 1 tsp of chopped garlic
  • 2 tsp of olive oil or regular vegetable oil

Method:

  • In a grill pan, add 1 tsp of oil and grill sliced aubergines till they are ¾ cooked (they should become tender)
  • In a wok drop a tsp of oil and add garlic, cook for 30 seconds.
  • Add crumbled paneer and vegetables juliennes, toss them for a minute
  • Add blanched spinach and cook for 1 minute.
  • Season the mixture with salt to taste and black pepper.
  • Preheat oven 150 degree for 2 minutes.
  • Apply prepared mixture on grilled aubergines and grate some cheese over it. Roll the aubergine and place it on a baking tray.
  • Once all rolls are ready and placed in tray, drizzle some oil over them, season with salt and pepper.
  • Bake it for 2 minutes at 150 degrees.
  • Serve with toothpicks for a pop-in-your mouth bite
