Start your Holi party with this exotic and healthy Starter!

Serves: 4
Ingredients
- 2 Aubergine lengthwise into 1/4-inch-thick slices
- 1 cup blanched spinach
- ½ crumbled paneer
- ½ mozzarella cheese
- 1 cup vegetables juliennes (cabbage, zucchini, carrot or any vegetable/s of your choices)
- 1 tsp of chopped garlic
- 2 tsp of olive oil or regular vegetable oil
Method:
- In a grill pan, add 1 tsp of oil and grill sliced aubergines till they are ¾ cooked (they should become tender)
- In a wok drop a tsp of oil and add garlic, cook for 30 seconds.
- Add crumbled paneer and vegetables juliennes, toss them for a minute
- Add blanched spinach and cook for 1 minute.
- Season the mixture with salt to taste and black pepper.
- Preheat oven 150 degree for 2 minutes.
- Apply prepared mixture on grilled aubergines and grate some cheese over it. Roll the aubergine and place it on a baking tray.
- Once all rolls are ready and placed in tray, drizzle some oil over them, season with salt and pepper.
- Bake it for 2 minutes at 150 degrees.
- Serve with toothpicks for a pop-in-your mouth bite
