Recipe: Quinoa Salad

Preparation Time: 10 minutes
Serves: 3-4

Ingredients

  • ½ cup Quinoa
  • 1 peel Pomegranate (source of Viatmin C and E)
  • 3-4 chopped Apricots or Raisins (as per your choice)
  • Handful of Walnuts (contains good fats)
  • 3-4 Kale (Kale is a super food with zero calories)
  • 3-4 lettuce
  • 2-3 Bail leaves
  • Juice of 2 lemons
  • Salt to taste
  • Pepper
  • Honey (Honey is best and healthy substitute of sugar)

Method:

  • Soak quinoa in 1 cup hot water, keep it aside till it absorb water.
  • Till a clean bowl, add pomegranate, chopped apricots and coarsely crushed walnuts.
  • Add lemon juice to a different bowl along with salt, pepper and honey, mix them all well.
  • Now add chopped kale and lettuce to the prepared mixture of lemon and honey. Mix them all together.
  • Add soaked quinoa, pomegranate-walnut mixture to the lemon-honey-leaves mixture.
  • Garnish the prepared quinoa salad with basil leaves.
