Ingredients
- ½ cup Quinoa
- 1 peel Pomegranate (source of Viatmin C and E)
- 3-4 chopped Apricots or Raisins (as per your choice)
- Handful of Walnuts (contains good fats)
- 3-4 Kale (Kale is a super food with zero calories)
- 3-4 lettuce
- 2-3 Bail leaves
- Juice of 2 lemons
- Salt to taste
- Pepper
- Honey (Honey is best and healthy substitute of sugar)
Method:
- Soak quinoa in 1 cup hot water, keep it aside till it absorb water.
- Till a clean bowl, add pomegranate, chopped apricots and coarsely crushed walnuts.
- Add lemon juice to a different bowl along with salt, pepper and honey, mix them all well.
- Now add chopped kale and lettuce to the prepared mixture of lemon and honey. Mix them all together.
- Add soaked quinoa, pomegranate-walnut mixture to the lemon-honey-leaves mixture.
- Garnish the prepared quinoa salad with basil leaves.
